I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Basic Pancake Recipe

Today you have the recipe for basic pancake batter:

 

          Ingredients 
4oz plain flour 
2 eggs 
1/2 pt milk 
Pinch of salt

 

This mix can be made and left in fridge for up to 12 hours. The trick is to have a good non-stick pan first, then get the pan really hot, then add a teaspoon of sunflower oil and swirl around.  Then pour batter in to pan to thinly cover about half the pan.  Next tip pan around so that the batter spreads over entire pan.  Don't rush to turn pancake, and by the way turn heat down a bit now. When curling at the edges either flip (and drop!) or get a spatula and turn over.  1-2 mins on each side should do it.  Have a go!   The first one is usually a mess, but don't give up!
