I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Midday Meal Loaf


Ingredients
2 tbsp oil 
1 tbsp mustard seeds
1 1/2 tsp sea salt
1/2 tsp ground pepper
1 large onion (chopped)
1 large red pepper (seeded and chopped)
1 small red chilli (seeded and chopped)
1 cup gram flour
1 cup soya or rice milk
3 medium eggs, beaten
1 cup Quark
1 tbsp garam masala

Method
Line a loaf tin or baking dish (about 9" x 6"with greaseproof paper (unless it's really non-stick!) Grease the paper as well.   
Put oil, mustard seeds, salt and pepper and chilli in your heaviest pan (large saucepan or frying pan) and heat until the seeds start to pop.  (Watch them as they'll jump everywhere at this point!)  Add onion and red pepper and cook for 10-15 mins until tender.
In a large mixing bowl put gram flour and 'milk'.  Mix and when smooth add the eggs one at at time using whisk.  Add Quark and mix till smooth.  Stir in the cooked veg from pan.  Pour into the tin/dish and bake at 175 degrees for 30-40 mins until firm.  
Put a skewer in when it looks golden and cooked and see if it comes out clean - if so done!
Let it cool for a short while and then turn out onto a cooling rack.
Once cool wrap in foil and you have lunch for the week.  Take a slice each day.

It ticks all the boxes :  It's very filling, tasty, cheap, easy and quick to make!
(PS.  You'll find Quark next to the Ricotta, mozzarella in supermarket)
