Ginger Ale
This is such a good (and cheap!) non-alcoholic drink. So yummy that you don't feel like you're missing out!! (Out of May's Good Housekeeping)
Bring 500ml water to the boil and stir in 300g peeled and finely chopped fresh ginger and 225g caster sugar.
Simmer for 5 min until sugar has dissolved and then remove from heat and leave to infuse for 20 minutes.
Strain into a lidded container and keep in fridge.
To use: Put some syrup in a glass (amount according to taste, but like diluting a cordial) add ice cubes and a sprig of mint and top up with soda water/fizzy water.
