I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Poppy Seed Crackers

Seeded Oatcakes

You can use poppy seeds or nigella or sesame seeds or herbs)
Makes about 30. 

Ingredients
75g rolled oats
100g fine oatmeal (for this I put rolled oats in grinder and processed till fine) Extra needed for rolling out dough
2 tbsp seeds
3 tbsp olive oil
100-150 ml boiling water (may need more)

Method
Heat oven to 180C
Line two baking sheets with parchment
Combine oats, oatmeal, salt, pepper, seeds in a bowl.
Add oil in middle and then as much boiling water as needed to make a smooth dough.  
Work quickly and don’t knead for too long.
Form into a ball and let rest for 30 mins.  (it becomes a bit dry at this point - just add more water if needed to roll)
Roll dough out on board dusted with some oatmeal (I used flour as didn’t read this bit early enough!!)
Cut out cookies. I used Christmas cutters but can use simple round ones.
Bake for 30 mins till golden.
Cool on rack and store in tin - keep well
