Seed Loaf
120g ground almonds
100g sunflower seeds
100g pumpkin seeds
75g sesame seeds
30g chia seeds
1/2 tsp salt
5 eggs
75ml unsweetened almond milk
Grease and line a small loaf tin (approx 10x15cm - but it doesn't matter if it's bigger or smaller)
Combine all dry ingredients in a large bowl
Whisk eggs in a separate bowl and add almond milk
Mix wet with dry ingredients and pour into tin.
Bake at 180 C for 40 mins. Cook on wire rack
Slice thinly and eat plain, or spread with butter, or make an open sandwich with cream cheese and smoked salmon, basically whatever you like!
Store in fridge.
