I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Tortellini Bake

 A quick dish I found in the Saturday newspaper a while ago.  It takes 15 mins to assemble, and 20 mins to cook and it's yummy!

Ingredients:

1 tbsp olive oil
1 onion, chopped
300g beef mince
2 garlic cloves, crushed
1 x 400g tin chopped tomatoes
2 tbsp tomato puree
1 tsp dried oregano
handful of chopped basil leaves
500g pack of fresh spinach & ricotta tortellini
100g grated mozzarella (although it's so rich you could omit)

Method:

Heat oil and fry onions until soft.  Add beef, garlic and S&P. Cook for 3-4 mins, then add chopped tomatoe


s, tomato puree and oregano. Cook for 10 mins gently.  Add basil and mix.

Put tortellini in a dish (30 x 20cm approx).  Pour sauce over and add 350ml just-boiled water. Sprinkle on the cheese and put in oven at 180 degrees for 20 mins - until all liquid has been soaked up.
