I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Quick and easy home-made mincemeat

Ingredients:

2 eating apples ( Braeburn or Pink Lady work well)
125g sultanas
125g raisins
125g currants
100g glacé cherries 
100g vegetarian suet
200g light soft brown sugar
100g flaked almonds
zest and juice of one orange
4 tbsp brandy 
(instead of buying the different dried fruit, you could use the same weight of dried mixed fruit)

Method

Peel and grate the apples and stir in everything else.

Put in an airtight container/Tupperware and leave in a cool place (not fridge) for at least one week, and up to two months.  Shake and stir the container occasionally.

Once mature, store in sterilised jars, or just make mince pies and eat!!
