No-bake 'Chocolate' Squares
Delicious, easy to make and nutritious! What's not to like?!
Ingredients
8 tbsp mixed seeds (flax, pumpkin, sunflower, sesame)
3 handfuls goji berries, chopped
1 handful pitted dates, chopped
4 tbsp cacao powder
1 tbsp desiccated coconut
1 tsp ground cinnamon
4 tbsp coconut oil
1 tbsp nuts (pecan, walnuts, almond), chopped
1 tbsp dried fruit (apricots, cranberries), chopped
3 handfuls goji berries, chopped
1 handful pitted dates, chopped

4 tbsp coconut oil
1 tbsp nuts (pecan, walnuts, almond), chopped
1 tbsp dried fruit (apricots, cranberries), chopped
Here's what you do:
Put aside 1 tbsp of seeds and goji berries and then put all ingredients - except coconut oil, nuts and dried fruit - in a food processor and process to a coarse mix.
Melt coconut oil and add to dry ingredients and process more to a firm paste.
Line a tin with baking paper (17cm x 24cm is perfect size). Use enough paper to overlap so you can cover the mix when it's in the tin - it helps with the pressing down.
Put mixture in tin and sprinkle nuts, fruit and extra seeds on top. Press down firmly.
Place in the fridge for 3 hours, then cut and eat!
