I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Victoria Sponge

This is the BBC Good Food recipe, which makes a reliable, plain and easy sponge cake.  You could always add lemon rind, almond or vanilla essence etc.  First of all, grease 2 x 20cm cake tins and line base with greaseproof paper.  Heat oven to 170C (fan oven). 

Ingredients

200g caster sugar
200g softened butter (or baking block)
4 large eggs, beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk

Method

Beat the sugar, butter, eggs, SR flour, baking powder and milk together  to a smooth batter and pour into tins.  Bake for 20 mins - or until a skewer inserted into the cake comes out clean.

For the icing you could use butter icing (100g softened butter and 140g icing sugar beaten together) with strawberry jam or if using lemon rind - just spread with a good lemon curd.
