Mackerel pate tartlets - super fast to make!
Once you've made the Smoked Mackerel Pate (see recipe on blog), you can turn it into a fancy canapé in about 10 mins!
What you need:
1 x pack of tortilla wraps. (I used the Mission ones, as they're very pliable)
Oil/ butter
Mini tart tin
Pate or fillling of your choice
What to do:
Use a round cookie cutter slightly bigger than the tin size and cut out enough circles to fill the tin.
Brush the empty tart tin moulds with oil or butter and press the circles in to form a tart case. Pleat and squeeze the tortilla to fit the tin size.
Spray the tortillas lightly with oil and bake in a hot oven for 5-10 mins till golden.
Leave to cool on a wire rack and then either fill with the pate straight away or store in an airtight tin until ready to fill with whatever you choose. So much easier than making the pastry cases and they stay nice and crisp - but don't put filling in too far in advance of eating.
