Sweetcorn Patties

Hi girls,

Here is this week's recipe!  One you know, and love, I think.  Very easy to make and can be made the day ahead, cooked the next day and eaten hot then cold the day after.

Sweetcorn Patties (like a flat bhaji)



325g can sweetcorn, drained
1 onion chopped finely
1 teaspoon medium curry powder
1 garlic clove, crushed
1 teaspoon ground coriander
2 spring onions, chopped
3 tablespoons plain flour
salt
1 large egg (or 2 small ones)
4 tablespoons sunflower oil (for frying)


1.  Mash the drained sweetcorn lightly in a bowl. Don't worry if it doesn't squish down much.
2.  Add all remaining ingredients (except oil) stirring after each addition.  (At this point cover and keep in fridge if going to leave before cooking)
3.  Head oil in frying pan.  When hot drop tablespoon of mixture onto hot oil.
4.  Cook for 4-5 mins turning each patty once after a couple of mins.

Don't try and turn them too early or they'll break.  Once golden on both sides they're ready to eat.  
Tip : once oil is hot you may need to turn heat down a bit under pan. Good to add a few slices of chopped spring onion if you have any left.
