I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Asian Chicken Burgers


Makes about 16 mini burgers

4 chicken breasts (or 2 breasts and 4 thigh fillets - my preference) If you don't have a mincer, buy chicken mince.

40g salted peanuts, chopped
3 spring onions, chopped
2.5cm ginger, grated
1 tbsp Thai fish sauce
1 red chilli, chopped
1 bunch coriander, chopped.

Mince chicken and put in large bow.
Add all other ingredients.
Shape into burgers and fry.

I shallow fry them (in walnut oil, optional) to give them some colour, and then put in oven at 180 degrees to finish off, while frying the others.  Cut to check cooked in middle.  Timing depends on thickness.  Usually takes about 10 mins max.
Delicious hot or cold!
