I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Granny Pam's Coronation Chicken



The family joke was that she loved to put meat with fruit!

6 chicken thigh fillets/breasts
4 oz creme fraiche
2 tbsp curry powder
3 tbsp mango chutney
1 tbsp Worcester sauce
2 celery sticks, chopped finely
3 oz dried apricots, chopped finely
2oz flaked almonds
Bunch of coriander, washed and chopped (leaves and stems)

Poach the chicken - put in pan with cold water, bring to boil and simmer for 15 mins, then drain and cool.
Dry fry the curry powder for about 30 seconds (makes it tastier!) and empty into a large bowl
Add creme fraiche, chutney, Worcester sauce, apricots, celery, almonds and coriander
Cut cooled chicken into bite-size pieces, add to the bowl and mix.
