Easy-to-make Lamb Samosas
First of all make the filling (this can be done up to a day ahead)
No need to make pastry - these are made with shop bought soft flour tortillas - a great cheat!
For the filling:
450g lean lamb mince
3 crushed cloves garlic
8cm piece of ginger, peeled and grated
2 tsp garam masala
1 tsp cumin seeds
half tsp chilli powder
half tsp chilli flakes
1 tsp sea salt
225g potatoes, peeled and cut into half cm cubes
125g frozen peas
Method
Fry the mince in a large pan for 5 minutes, until browned
Add garlic, ginger, garam masala, chilli flakes, chilli powder, cumin seeds, salt and potatoes.
Cook, with lid on, over medium heat for 15 mins, stirring occasionally.
Add the peas and cook on very low heat for 10 more mins, until potatoes are soft. If mixture sticks to pan add a small splash of water.
Let mixture cool.
For the 'pastry':
8 soft flour tortillas
1 egg, beaten
Method
Cut tortilla in half to make semi circle. Brush one edge with beaten egg and fold semi circle to make a cone shape. Pinch until seam 'sticks'. Now holding the cone, put a spoonful of the mixture in the cone leaving 2cm rim at top. Brush top edge with more egg and pinch closed, hold till firmly closed.
Put on greased baking tray - seam side down - and brush with egg. On to the next....
Put tortillas in oven at 180 degrees for 15 mins - or till golden. Cool on a wire tray or serve immediately
