Savoury Flapjacks
Great lunch box/on the go food! Takes 15 mins to throw together and pop in oven.
50g butter
150g oats
75g strong cheese (Cheddar or hard goats cheese)
225g grated mixed veg (e.g. carrot, courgette, squash, onion)
1 tbsp ground or smashed (in pestle and mortar) seeds (e.g. pumpkin, sunflower)
1 tbsp sesame seeds
30g chopped nuts (e.g. walnuts, hazelnuts, brazil, almond)
1/2 tsp mixed herbs
2 large eggs, beaten

Butter a 20cm x 20cm baking tin (if not non-stick, line with greaseproof paper)
Put all ingredients except butter in a large bowl and mix well.
Melt the butter and add to bowl, mix well.
Press mixture into baking tin and bake in oven at 180 degrees for 30-35 mins - until golden.
Score lines in flapjack while hot, but leave to cool in the tin. Then remove.
Store in fridge for up to 3 days.
Absolutely delicious and very filling - will add photo next time I cook them!
