Broad Bean Mousse
Broad bean mousse
Serve with salmon, chicken, or even just on sourdough bread!
250g podded broad beans
2 tbsp lemon juice
30g mint leaves
50g Pecorino cheese (parmesan will do if not)
4 tbsp extra virgin olive oil
Cook broad beans for 5 mins
Cool and skin beans (takes ages to skin them but you gotta do it!)
Put beans, lemon juice, mint leaves, pecorino and olive oil in blender and blitz to mousse.
Season and enjoy!
