Lamb & Sweet Potato Pie
Serves 12.
Ingredients
2.5kg lamb mince
6 tbsp olive oil
6 onions - chopped
6 garlic cloves - crushed
2 tsp cumin seeds
2 tsp ground coriander
1 tsp cinnamon
1/2 tsp chilli powder
50 ml sherry
1 large tbsp tomato puree
600ml lamb stock
2.5kg sweet potatoes
600ml Greek yoghurt
60g butter
Method
Heat oil, add onions, garlic - 20 min cook then remove
Drain off excess fat leaving a little for mince
Brown mince in pan in small batches. Remove and add to onion mix
Discard any oil left in pan.
Return meat and onions to pan and add spices - 2 mins
Add sherry and scrape base of pan to get caramelised flavour bits
Add tomato puree and stock - 40 mins at simmer
Bake sweet potatoes at 220C for 30 min
Scrape out all flesh and discard skins
Mash with yoghurt and season
Put lamb in dish and spoon over mash
Dot with butter and bake in hot oven to caramelise top
