I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Thai Beef Daube


Serves 6 - make 1 day in advance or freeze - improves flavour

Ingredients
5 tbsp sunflower oil
1.1kg stewing beef (or buy a topside joint and cut into cubes)
550g onions - chopped
50g ginger - grated
1 large red chilli - deseeded and chopped
2 tsp garam masala
4 garlic cloves - crushed
400ml can coconut milk
4 sticks lemon grass - bashed lightly
salt, pepper
25g butter
350g shiitake mushrooms

If you have, use an ovenproof/flameproof casserole so you can put straight into oven after hob.

Method
Heat 3 tbsp of oil and brown beef in batches over high heat. Set aside
Pour rest of oil into casserole
Add onions and cook - 10 mins
Add ginger, chilli, garam masala, and garlic and cook - 5 min
Return beef to casserole
Add coconut milk, 1/4 pint water and lemon grass. salt, pepper
Bring to boil - cover and simmer for 5 min
Put in oven at 170C for 1.5 hours

Heat butter in pan and add mushrooms - 5 mins
Season and stir into beef

Serve with rice or pommes puree.
