I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Salmon with squash puree

Roasted salmon with spiced squash puree

Serves 2

(Marinate fish and make puree in advance)

2 tsp sesame oil
4 tsp soy sauce
2 tsp honey
2 large salmon fillets
1 medium butternut squash (or cocina) diced with skin on
olive oil
2 tsp cinnamon
salt and pepper

Mix sesame oil, soy and honey and marinate salmon for at least an hour

Place diced squash in roasting tray and drizzle with oil and season - Roast at 190C for 40 mins
Put cooked squash in food processor with 6 tbsp water and cinnamon and blend
Place marinated salmon on baking sheet and pour over remaining marinade
Bake at 180C for 20 min
Spread puree in centre of plate and place fillet on top
