I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Dodos (little cupcakes with raspberries)

Dodos are little cupcakes with raspberries. Recipe makes 12-15.

Ingredients
100g softened unsalted butter
100g caster sugar
100g ground almonds
2 medium eggs
40g gluten free plain flour
12-15 fresh raspberries

Method
Beat butter and sugar together with a pinch of salt, until pale and creamy.  Stir in the ground almonds and beat in the eggs.  Stir in the flour and fill the paper cases ¾ full.  Mix is quite wet, so use two paper cases together to strengthen them.  Press in a raspberry to each one and bake at 180C for 15-20 mins.

Very delicious - could serve as a supper party dessert with ice cream - ate all before I remembered to take photo!
