Roasted Tomato and Red Pepper Soup with Vodka
Really easy and delicious starter for supper party
These quantities serve 6.
Ingredients
1.4kg very ripe tomatoes
2 red peppers, deseeded and chopped
4 garlic cloves, crushed
3 small onions, sliced
20g pack of fresh thyme
4 tablespoons olive oil
4 tablespoons Worcestershire sauce
4 tablespoons Vodka
6 tablespoons of creme fraiche or double cream.
Method
Heat oven to 200C and put tomatoes, peppers, garlic and onions in roasting pan and sprinkle with six stems of thyme. Drizzle with olive oil and roast for 25 mins. Turn the vegetables and cook for a further 25 mins until tender and slightly charred. Put one third of veg in a blender with 1/2 pint of boiled water and add Worcestershire sauce, vodka and salt and pepper. Blend till smooth and pour through a sieve into a pan. Blend remaining veg with 3/4 pint of water and that's it. Heat through and stir in cream when ready to serve.
Can be made a day ahead, or frozen. Cream can be left out if preferred.
