I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Spinach Layer Pie

For 4 people.

Ingredients
500g beef mince
200g chopped onion
2 tablespoons tomato puree
1 teaspoon mixed herbs (or Herbes de Provence)
1 bag of frozen chopped spinach
300ml natural yoghurt
2 egg yolks
pinch of Colmans mustard powder
50g grated cheese

Method
Cook mince and onion adding tomato puree and seasoning.
Cook spinach and drain
In an oven proof dish, put a layer first of mince, then spinach, mince then spinach.
Mix yoghurt, egg yolks, mustard powder and cheese and pour over dish.
Cook at 180C for 40 mins till golden.
