Scotch Tarts
This was one of my first supper party starters - great because you use bread instead of making pastry!
This makes 8 tarts. You need deep bun tins.
Ingredients
30g melted butter
8 thin slices of wholemeal bread
Filling:
60g smoked diced bacon
1 small onion
30g butter
60g button mushrooms, halved
2 tablespoons whisky
salt and pepper
2 tablespoons creme fraiche
30g grated mature cheddar
Method
Brush the tins with melted butter. Use a rolling pin and flatten bread. Cut circles and press bread into tin. Brush with remaining melted butter and bake at 180C for 15 mins. Keep an eye on them and don't let them burn.
Put bacon in pan and cook till crisp. Remove from pan and then cook onion in butter till soft and golden. Add mushrooms and cook for 2 mins. Return the cooked bacon to the pan and add whisky and simmer for 1 minute. Turn off heat and stir in seasoning and cream. Spoon mixture into cases and sprinkle with grated cheese. Bake in oven for 10 mins at 180C.
