I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

Victoria Sponge

Buy yourselves two 8inch or 20cm non stick cake tins because once you can make one of these, that's all you'll ever need!

Ingredients
6oz self raising flour
6oz margarine
60z caster sugar
3 eggs
1 teaspoon baking powder
pinch of salt

Method
Put all that in the food processor and blend - or beat all together by hand.

Line the cake tins with greaseproof paper and grease that as well.  Put half the mixture in each tin and bake for 20 mins at 180C.  Stick a skewer into middle and if it comes out clean then it's cooked.

Turn out and leave to cool, then sandwich together with whatever you fancy.   And scatter one teaspoonful of icing sugar through a tea strainer onto the finished cake for the professional look!
