I started this blog for my daughters when they left home. I wanted to share a few easy, cheap and favourite recipes with them. Now ten years later, it's just where I put my favourite recipes.

One-Pan Chicken with Tomatoes

Serves 4

Ingredients
4 chicken thighs
1 red onion, sliced
400g tin chopped tomatoes with herbs
400g tin mixed beans, drained and rinsed
2teaspn balsamic vinegar

Method
Fry chicken thighs skin side down until golden.  Turn over and fry for a further 5 min.
Add onion and fry for another 5 min.
Add tomatoes, beans and vinegar.
Cover and simmer for 10 min until piping hot.
