Sweet Potato and Goat's Cheese Frittata
Serves 4.
2 sweet potatoes, sliced thinly
8 eggs
100g goat's cheese
10 large fresh mint leaves
Handful of flat-leafed parsley chopped
Method
Boil sweet potatoes for 2 mins and then drain and leave to cool.
Beat eggs in a large bowl and then crumble in the cheese, chopped herbs and sweet potato.
Season with salt & pepper.
Line a 20cm square baking tin with greaseproof paper and pour in the egg mixture.
Put in oven at 180 degrees for 12-15 mins until cooked through.
Lift from tin using the greaseproof paper and then remove paper and slice to serve.
